Heart Healthy Roasted Chile “Cream” Sauce

Roasted New Mexico Hatch Chile “Cream” Sauce

They are roasting up a storm in Hatch, New Mexico. And we are fortunate that our local Bristol Farms is carrying this fresh crop of Hatch chiles. If you cannot get Hatch chiles where you live, please try this sauce with roasted Anaheim, New Mexico, or poblano chiles. Rich and creamy with medium-hot spiciness, this savory sauce is terrific on fish, chicken, vegetables, rice, and tacos! And it’s heart healthy – made with tofu, canola oil, roasted chiles, cilantro, cumin and lime juice. No cream.

Creating Heart Healthy dishes is a fun adventure for me. I feel like I have discovered a whole new cuisine! In this dish I use whole wheat pasta for the extra fiber, a green leafy vegetable, vegetable protein to replace pork sausage, and tofu to replace ricotta cheese. Eating vegetable-based meals several times a week helps me to control my cholesterol. And these meals are so satisfying, I don’t miss the meat or cheese.

…just to name a few. It’s funny to think that I have enjoyed many a bowl of miso soup in Japanese restaurants over the years, yet I never thought to prepare it at home. The soup is wonderful. It takes only minutes to prepare, it is light, yet simultaneously hearty and satisfying with intriguing complex flavors.
