Oatmeal Date Walnut Cookies for the Holidays
They’re really terrific all year round, but just a little dusting of powdered sugar can make this hearty-crispy-chewy oatmeal cookie perfect for the holidays as well.
Oatmeal Date Walnut Cookie Recipe
Ingredients:
- 7 T. butter, softened
- 3/8 c. light brown sugar
- 1/4 c. granulated sugar
- 1 egg
- 1/2 t. vanilla extract
- 3/4 c. all-purpose flour
- 1/2 t. baking soda
- 1/4 t. cinnamon
- 3/4 t. kosher salt
- 2/3 c. chopped dates
- 2/3 c. chopped walnuts
- 1 1/2 c. old-fashioned rolled oats
- powdered sugar for presentation
Method:
Preheat oven to 350°F.
Use an electric mixer to beat butter and sugars in a large bowl until creamy. Then add egg and vanilla and mix well.
Mix flour with baking soda, cinnamon and salt. Then mix flour mixture with the butter mixture.
Lastly add oats, dates, and walnuts. The batter will be very thick and chunky so use gloved hands to mix it all together.
Drop 16 rounded mounds onto ungreased cookie sheets. Let rest for 20 minutes.
Bake 18 – 20 minutes until light golden brown. Cool for one minute on cookie sheet, then remove to a wire rack to continue cooling.
Dust with powdered sugar for a festive presentation.
