Old Dr. James H. Salisbury (1823-1905) probably wouldn’t be surprised that the recipe he introduced in 1888 is still going strong. The good American doctor believed that beef was an excellent defense against many different physical problems. And while his suggestion that Salisbury steak be eaten three times a day is extreme to say the least, many of us do enjoy his comfort-food creation from time to time.

Salisbury Steak Dinner Recipe

Old School: Salisbury Steak Dinner

Salisbury Steak
  • 1 lb. ground beef
  • coarse sea salt and fresh ground black pepper
  • garlic powder
  • onion powder
  • worcestershire sauce
  • olive oil

Hand mix ground beef with seasonings to taste. Form into 4 to 6 patties, plump and oblong shaped. Season exterior of patties with a bit more salt and pepper.

Heat olive oil in a large skillet over medium-high heat, add patties and cook until well-browned on both sides, then remove them to a platter.

Old School Salisbury Steak Dinner

Mushroom Onion Gravy
  • olive oil
  • 1 medium/small yellow onion, sliced vertically
  • 5 oz. mushrooms, sliced
  • 2 T. flour
  • 2 c. rich beef stock

Add a splash of olive oil to the same skillet if needed. Add onions and mushrooms then cook until soft and browning. Sprinkle with flour and cook for another minute, stirring constantly with a wooden spoon. Add beef stock and stir to combine. Bring to a boil, stir, then immediately lower the heat to medium-low and add beef patties plus any accumulated juices back to the pan. Cover and cook until the patties are cooked through, about 10 minutes.

Buttered Green Beans
  • fresh green beans
  • butter
  • coarse sea salt and fresh ground black pepper

Trim the green beans then slice into approximately 1 1/2″ pieces.

Microwave, covered, with a bit of water for about 3 minutes until al dente. Drain any excess water.

Melt butter in a medium skillet over medium heat. Add the beans and cook until quite tender, just like the old school texture. Finish with salt and pepper.

Creamy Mashed Potatoes
  • russet potatoes, peeled
  • half and half (1/2 milk, 1/2 cream)
  • butter
  • coarse sea salt and fresh ground black pepper

Mashed potatoes are cooked in the usual homestyle manner. Add half and half, butter, salt and pepper to taste.

To Plate

Spread mashed potatoes along one side of a warm shallow bowl. Ladle a generous amount of gravy in one-third, spoon green beans in the other third. Place one or two salisbury steaks in the center. Enjoy as is.

Resist the temptation to fancy-up this classic old school dish with garnishes such as parsley or chives.
