Caviar & Crème Fraîche Stuffed Olives

Caviar

Drain olives well. Roll the thick cultured cream into a little oval ball, slightly smaller than the olive hole. Stuff it down into the olive. Run a pick through the olive horizontally, a little above the equator so it can hang upright on the glass. Use the skinny end of a little cocktail spoon to stuff caviar into the olive and mound it on top.

A Couple Drops of Green Chartreuse

2 1/2 oz. London Dry Gin such as Handcrafted Wild Roots Northwest Gin from Oregon

1/2 oz. Dry Vermouth such as Dolin Dry Vermouth de Chambéry

One Caviar Stuffed Olive

Swirl a couple drops of green chartreuse around the inside of a martini glass, then chill it. Place plenty of ice in a mixing glass and add the gin and vermouth. Stir for at least 30 seconds until well chilled. Strain into the chilled martini glass. Hang the caviar olive over the glass. Makes one martini.

Caviar Crème Fraîche Dip and Vegetable Chips

Thin out the crème fraîche with a bit of cream to a dipping consistency. Spoon it into a fancy ramekin, top with caviar. Serve vegetable chips on the side.
