What started out as an idea to make a deconstructed pork tamale, morphed into one extremely mouth-watering dish. Creamy polenta with fresh corn is topped with a pumpkin seed kale cilantro pesto. Braised pork shoulder is fried in a bit of oil to give it crispy edges, then piled on top. A dizzying array of garnishes make the dish come alive – avocado, somewhat spicy pumpkin superseedz, pickled radish and red jalapeño, cotija cheese, mexican crema, cilantro.

Carnitas, Polenta, Pumpkin Seed Kale Cilantro Pesto Recipe
Pumpkin SuperSeedz Kale Cilantro Pesto
1 c. kale, tightly packed
1 c. cilantro, tightly packed
¼ c. Really Naked (unsalted, unflavored) Superseedz Gourmet Pumpkin Seeds
1 garlic clove
1 serrano chile, seeded
1 T. lime juice
¼ t. kosher salt
2 T. parmesan, grated
½ c. olive oil
Blend first seven ingredients in a food processor. Add chesse. Stream in olive oil. (This nutritious pesto recipe is terrific with pasta as well).

Quick Pickled Radish and Red Jalapeño
3 red jalapeños, sliced
1 bunch radishes, sliced
3/4 c. rice vinegar
3/4 c. water
3 T. sugar
2 t. kosher salt
In a small sauce pan, bring vinegar, water, sugar and salt to a boil. Stir to dissolve sugar and salt. Place jalapeños and radishes in a heatproof container. Pour hot liquid over, to submerge. Let come to room temperature, then cover and refrigerate until needed.
Polenta with Mexican Sour Cream
4 c. water
1 c. polenta
1 t. salt
fresh ground pepper
1/2 c. mexican sour cream
Slowly add polenta to boiling salted water, whisking constantly. Partially cover and continue to whisk frequently until the polenta thickens, about 25 minutes. Blend in sour cream and season with fresh ground pepper.
Meanwhile, boil an ear of corn for 5 minutes, let cool slightly then shave the kernels from the cob, keeping them somewhat intact.
For the carnitas – take pre-cooked braised pork shoulder and shred into bite-sized pieces and chunks. Fry in a small amount of canola oil until the edges get crispy. Remove to paper towels. Season with salt and pepper and a squeeze of lime.
Ladle warm polenta into serving bowls. Arrange corn on top of the polenta. Place a good dollop of pumpkin superseedz kale cilantro pesto in the center then top with carnitas.
Garnish with pickled radish and red jalapeños, crumbled cotija cheese, a drizzle of Mexican crema, cilantro, and somewhat spicy gourmet pumpkin superseedz (that are more FLAVOR than FIRE, a savory blend of aged cayenne pepper, garlic, sea salt and just enough spice to satisfy).
