Classic Greek Salad with Peaches
In an ephemeral memory, I remember her disappointment when being served a Greek salad long ago at some swanky Chicago restaurant. It had all the requisite ingredients, but was composed with lettuce. Lettuce, she told us, was not supposed to be in a Greek salad.
With absolutely no Greek ancestry whatsoever, my wonderful mother was an ardent fan of Greek food. When she would return to Chicago to visit family and friends, dinner out with my Aunt Alice for Athenian chicken was on the top of her list.
The classic savory summer salad is transformed by adding sweet peaches and the combination is stellar. Super-juicy and seductively aromatic, peaches highlight the what is most memorable about this time of year’s produce.
Ingredients:
- white california peaches, cut into wedges
- heirloom tomatoes, cut into wedges
- persian cucumber, spiralized
- greek feta, sliced
- red onion, thinly sliced
- green bell pepper, sliced
- kalamata olives
Arrange ingredients on a platter or large shallow bowl.
To Dress The Salad:
- dried oregano
- dried mint
- olive oil
- red wine vinegar reduction
- kosher salt
- fresh ground pepper
- mint leaves
Sprinkle dried oregano and mint over the salad. Drizzle olive oil and red wine vinegar reduction over the top. Season with salt and pepper. Garnish with mint leaves.
Mom liked green bell peppers and so do I. She always included them in her (super-popular on pinterest) vintage potato salad recipe. If you are not a fan, leave them out, the salad will still rock.
I think you would have liked this one, Ma. Not too heavy on those cucumbers of which I remember you would say, “I like them, but they don’t like me.”
As a kid, of course, I never understood that.
