Vegas-Style Cactus Ginger Margarita
Kick back and relax poolside under the bright Vegas skies while sipping on a Fabulous Vegas-Style Margarita. Groove to the smooth sounds of crooners Dean Martin and Frank Sinatra. Enjoy dinner crafted by one of the dozens of celebrity chefs, take in a show. Later in the evening, cruise the casinos and let Luck Be A Lady Tonight!
My original Poolside Signature Cocktail is the marriage of a Ginger Margarita and a Prickly Pear Margarita.
Tequila, orange liqueur, lime, and salt are all it takes to make the perfect classic margarita… but substitute Domaine de Canton ginger liqueur for the usual Triple Sec or Cointreau and add an ounce of the fabulous desert-born, magenta-hued prickly pear cactus syrup…and Viva Las Vegas My Friends!
Cactus Ginger Margarita Recipe
Cactus Ginger Margarita
6 oz. Tequila
4 oz. Domaine de Canton Ginger Liqueur
2 oz. Fresh Lime Juice
1 oz. Prickly Pear Cactus Syrup
Process ingredients in a high-speed blender with just enough ice to chill but not to become slushy.
Pour into 4 coupes or martini glasses with sea salted rims.
Garnish with lime wheels.
Prickly Pear Cactus Syrup is a blend of pure cane sugar, organic prickly pear cactus, lemon, and citrus pectin.
Images of prickly pear cactus were taken near my home in Las Vegas on August 1st. The fruits that grow on the cactus pads are juicy and aromatic with a mildly sweet flavor reminiscent of watermelon and cucumber.
The fruits are plentiful and easy to harvest here in the wild. But I recommend to purchase at a Mexican Supermecardo where they have mechanically removed the dangerous glochid spines if you want to make the cactus syrup from scratch. Or even easier, purchase the ready-made syrup online.
Over 100°F at the pool. Had to add more ice! Just curious…Dean or Frank?
