How about a mouth-watering, restaurant-quality dish of braised lamb shanks with a pomegranate-fig sauce over boursin cheese polenta on the table in about 10 minutes?

Pomegranate Fig Lamb Shanks from Costco
Cut a 1″ slit near the end of the lamb shank pouch. Place on microwave safe dish. Microwave on high for 7 minutes 30 seconds. Let stand for 2 minutes. Carefully remove lamb shank. Pour sauce into a small dish. Skim off the fat. Taste sauce for seasoning. (The cooking time here is for one lamb shank).
Notes
This is a lamb shank slow braised in a tangy, sweet, and savory sauce with pomegranate juice and figs. The meat was incredibly tender and flavorful. It comes 2 shanks to a package and can be found in the refrigerated section at Costco. Is it as good as home-cooked braised shanks that take 2 1/2 hours? Of course not, but for a fast impressive meal, it can’t be beat.
Bob’s Red Mill Organic Corn Grits aka Polenta with Boursin Cheese
- 3 c. water
- 1 t. salt
- 1 c. grits/polenta
- 1 box 5.2 oz. garlic and fine herbs boursin cheese
Meanwhile, bring water and salt to a boil in a medium pot. Add polenta and reduce heat to low. Cook for 5 minutes, stirring occasionally until liquid is absorbed and polenta is creamy. Remove from heat, cover and let stand 2 minutes. Then stir in one box of boursin cheese.
Garnish
- cilantro
- mint
- red jalapeño
- lemon
While lamb and polenta are cooking, chop equal amounts of fresh cilantro and mint. Slice red jalapeño peppers into rings.
To Plate
Spoon a serving of polenta onto a warm shallow bowl. Place hot lamb shank in the middle. Ladle warm sauce over the lamb. Add a squeeze of lemon juice to brighten. Sprinkle with chopped herbs. Garnish with red jalapeño rings and a sprig of mint and/or cilantro. Serve extra jalapeño rings on the side.
