Chablis from Billaud Simon is brisk, balanced, and mineral-driven. It is one of the great domaines of Chablis which dates back to 1815. This particular wineย offers a nice combination of fruit and stony minerality. With its creamy texture, purity, and freshness – it paired very well with the salad of endives and our second course at Blackbird.

With knife and fork, our server deftly chops the salad, blending the perfectly poached egg with the endives and pancetta, creating a silky dressing and reducing the charming potato basket to crisp crouton-like chards.

Gorgeous. It’s a photo like this one (and the white asparagus from your other post) that are REALLY getting my creative juices flowing this morning. All of a sudden, I’m inspired to go do something “different” at home!
I actually like how “fussy” this plate it. It’s making me think about how I’d tear into it. And I kinda like that. ๐
