
🌶️ 🐟 Spicy Albacore Bowl 🐟 🌶️
This Spicy Albacore Bowl is a fresh, flavorful, creamy and slightly fiery seafood experience. Served over a bed of seasoned rice, the dish features tender cubes of raw albacore tuna marinated in a chili-infused blend that can be adjusted to suit your spice preference.
A drizzle of spicy sauce adds another layer of heat, while thin slices of jalapeño provide a bold bite and refreshing crunch. Crisp cucumber and peppery radish round out the bowl, offering a refreshing contrast to the rich, savory tuna. Perfectly balanced in flavor and texture, this dish is satisfying, invigorating, and easy!
Spicy Albacore Recipe
Seasoned Rice
- 1 c. short grain rice, cook according to package
- 2 T. rice vinegar
- 1 T. sugar
- 1/2 t. sea salt
- 1 T. dashi
Place vinegar, sugar, and salt in a small bowl. Microwave briefly until hot. Stir to dissolve the sugar and salt. Add dashi.
Sprinkle vinegar mixture over just cooked rice and toss to combine. Let rice cool to barely warm before serving.
Chili Marinade
- 1 T. lime juice
- 1 T. soy sauce
- 1 T. olive oil
- 1 T. chile garlic sauce (or to taste)
- several dashes of chili oil (to taste)
- 1 T. thin sliced scallion
- pinch sugar
- a few grinds of black pepper
Mix ingredients together in a small bowl. Let sit at room temperature while preparing the albacore, so the flavors meld.

Albacore Tuna Poke
- 7 to 8 oz. sushi-quality raw albacore fillet
Slice very cold albacore into bite-sized cubes with a sharp knife. Place in a medium bowl. Pour marinade over the top. Gently toss to combine. Refrigerate for 30 minutes while preparing the rest of the dish.
Cold fish is firmer and easier to cut. The fish can be chilled in the freezer for 10-15 minutes before cutting to firm it up without freezing.
Chili Sauce
- 2 parts mayonnaise
- 1 part sour cream (thinned with a bit of water)
- chili garlic sauce to taste
- salt to taste
Mix ingredients for the sauce and set aside. Sauce should be a pourable consistency, not too thick.

To Plate
- english cucumber, thinly sliced
- red radish, thinly sliced
- jalapeño, thinly sliced
- scallion, thinly sliced
Place barely warm seasoned rice in a serving bowl. Arrange cucumber, radish, and jalapeño around the perimeter in an overlapping fashion. Spoon albacore mixture including marinade into the center. Ladle chili sauce over the top. Sprinkle with scallions.
