Chablis from Billaud Simon is brisk, balanced, and mineral-driven. It is one of the great domaines of Chablis which dates back to 1815. This particular wine offers a nice combination of fruit and stony minerality. With its creamy texture, purity, and freshness – it paired very well with the salad of endives and our second course at Blackbird.

With knife and fork, our server deftly chops the salad, blending the perfectly poached egg with the endives and pancetta, creating a silky dressing and reducing the charming potato basket to crisp crouton-like chards.
Voilà!
