Quick Mussels Over Angel Hair Pasta
Garlic Butter Sauce, Fresh Herbs
Here I share another QUICK recipe. Last month it was a delicious Wonton Noodle Soup. This month it’s fabulous Mussels over Angel Hair Pasta.
Organic cultivated mussels from the pristine waters of Prince Edward Island, Canada are vacuum packed and fully cooked and pasteurized with a generous amount of garlic butter sauce added to each bag. The ingredients in the vacuum sealed bag are simply mussels, clarified butter, minced garlic, and parsley flakes. That’s it.
These sustainable tasty mussels are found in the refrigerated section at Costco. They offer a fresh, sweet, briny flavor reminiscent of the sea, with a tender, slightly chewy texture and a mild, delicate taste that isn’t too “fishy.”
Microwave mussels for 3 minutes, cook pasta for 2 minutes! Now that’s quick!
Quick Mussels over Angel Hair Pasta Recipe
Ingredients
- olive oil
- onion, finely chopped
- garlic, minced
- red chile flakes
- dry white wine
- sea salt and fresh ground pepper
- butter
- angel hair pasta
- Sogel Mussels
- lemon
- fresh herbs
Method
Bring a pot of salted water to a boil.
Over medium heat in a medium skillet, sauté onion in olive oil until soft. Add garlic and chile flakes and sauté another minute. Add a splash of white wine to deglaze. Season with salt and pepper. Add a pat or two of butter to melt.
Meanwhile, microwave mussels according to package instructions for 3 minutes. Let sit one minute.
Chop desired fresh herbs such as parsley, basil, cilantro, chives, or others.
Cook pasta al dente, drain. Then add pasta to the skillet and toss with the sauce.
To Plate
Tip the pasta into a pasta bowl. Snip the corner and pour the mussels and juices from the bag on top of the pasta. Do not toss. Let all the garlic butter/mussel juices from the bag soak into the pasta. Finish with a squeeze of lemon on top and plenty chopped fresh herbs. A few more red chile flakes are optional.
Be sure to provide a discard bucket for the shells in order to fully enjoy the pasta beneath!
