Grilled Garlic Pugliese Bread
Inspired by the coastal cuisine of southern Italy, Sea Bass all’Acqua Pazza is a beautiful way to prepare a delicate fish in a light, aromatic broth of cherry tomatoes, olives, garlic, white wine, capers, and lemon.
While traditionally made with Mediterranean fish such as branzino or other local catches, this version features Chilean sea bass, prized for its buttery texture and ability to remain tender and moist while gently poaching. Saffron is my addition, bringing a subtle floral aroma and golden hue to the broth while complementing the sweetness of the tomatoes and richness of the fish.
The name acqua pazza translates to โcrazy water,โ referring to the simple yet intensely flavorful cooking liquid. As the fish gently cooks, its natural juices mingle with the tomatoes, wine, and aromatics, creating a savory sauce meant to be enjoyed down to the very last spoonful.
And for that, you absolutely need good bread. I served the sea bass with Pugliese bread, a rustic Italian-style loaf with a crisp crust and airy interior. The slices were brushed with olive oil, charred on the grill, and rubbed with fresh garlic before being placed around the rim of the dish.
The bread is more than a sideโit is the perfect vessel for sopping up the saffron-infused acqua pazza broth, capturing every drop of the fragrant, tomato-rich โcrazy water.โ
Sea Bass all’Acqua Pazza Recipe
Ingredients
2 sea bass fillets (6 oz. each), cooked from frozen
2 T. extra-virgin olive oil
1 shallot, finely diced
3 garlic cloves, thinly sliced
1 pint cherry tomatoes, halved
ยฝ c. dry white wine
A generous pinch of saffron threads
ยพ c. light seafood stock
2 T. capers, drained
10 Castelvetrano olives, pitted and sliced
Salt and freshly ground black pepper
1/2 lemon, zested and cut into wedges
Fresh flat-leaf parsley leaves, for garnish

Method
Heat the olive oil in a wide sautรฉ pan with a lid over medium heat. Add the shallot and cook until softened, about 3 minutes. Add the garlic and cook for 30 seconds, just until fragrant.
Add the cherry tomatoes and a pinch of salt. Cook for 5โ6 minutes, gently pressing a few tomatoes with the back of a spoon until they begin to burst and release their juices.
The white wine and saffron go next, simmer for 2 minutes to allow the alcohol to cook off. Then add the seafood stock, capers, and olives. Bring the broth to a gentle simmer.
Nestle the frozen sea bass fillets into the broth. Cover and cook gently over low heat for 12โ16 minutes, depending on the thickness of the fillets, until the fish is opaque and flakes easily.
Remove the pan from the heat. Stir in the lemon zest and fresh lemon juice. Taste and adjust seasoning.
To serve, carefully transfer the sea bass fillets to shallow serving bowls. Spoon the acqua pazza broth around the fish, adding the tomatoes, olives, and capers. Garnish with whole flat-leaf parsley leaves and serve immediately with grilled Pugliese bread for soaking up the flavorful broth.
Grilled Garlic Pugliese Bread
4 thick slices Pugliese bread
Extra-virgin olive oil, for brushing
1 garlic clove
Brush the bread slices generously with olive oil and grill until charred. Rub the warm bread with the cut side of a garlic clove. Arrange the slices around the rim of the serving dish so they can soak up the saffron-infused acqua pazza broth.

Note
Recipe can be easily halved or doubled.
