Celebrating the Lunar New Year

When my brother shared photos of the famous Hoi An fried wontons he was enjoying in Vietnam, I was instantly inspired. Crispy, golden, topped with shrimp and pineapple — they looked utterly irresistible. With Lunar New Year in full swing and the Bellagio Conservatory alive with lanterns and blooms, pandas and koi celebrating the Year of the Fire Horse, it felt like the perfect moment to recreate a little of that festive magic at home.

These fried wontons hail from Hoi An, the charming central Vietnamese town known for its vibrant food culture. The local specialty is an open-faced, crispy shell with a well‑balanced, tangy topping.

My version recreates the sweet, savory, mildly spicy glaze. Fish sauce brings a caramelized depth that makes the shrimp taste fuller and more complex, adding an umami component. Dried red chilies fried in oil are served on the side for those wanting more heat.

Served as an appetizer or shared plate, they’re emblematic of Hoi An’s love for texture, freshness, and dishes meant to be enjoyed together. I served the wontons over a bed of curly green leaf lettuce, garnished with cilantro.

We will be sampling this salad along with other pineapple products at the IDDBA Convention on June 2, 3, and 4 at the Orange County Convention Center in Orlando, Florida. IDDBA is the largest industry-only show for dairy, deli, bakery, and food services industries. Aloha! Here is a nifty little appetizer to serve at a Hawaiian wedding shower, or any party with a tropical theme. It is simple to prep with just three ingredients – fresh pineapple, bacon, and brown sugar.

When asked to bring an appetizer to a party, anything wrapped bacon is sure to be a hit. Smoky bacon paired with tropical sweet-tart pineapple is a winning combination, guaranteeing this appetizer will be the first one to disappear.

Store-bought Hawaiian BBQ Sauce served on the side as a dip adds another smoky-sweet layer, enhancing the ripe pineapple and the umami bacon flavors. Arrive at the party, and just reheat your appetizer in a toaster oven then add it to the buffet. You will hear mahalo until the last tasty morsel is gone.

Aromatic Mahi Mahi & Pineapple Soup

Cilantro, Mint, and Lime

Fish, fruit, vegetables and aromatic herbs combine to make this simultaneously spicy, sour, sweet, and savory soup. Mahi mahi (aka dorado and dolphinfish) has a mild flavor similar to swordfish and a firm meaty texture with large moist flakes. This recipe features wild-caught mahi mahi from the Pacific waters off the coast of Baja California, Mexico. Vietnamese Sour Fish Soup (which is traditionally made with a whole catfish, including the head and bones) was the inspiration for this fast, easy, and heart healthy incarnation.
