How To Wake Up Your Oatmeal
Ingredients
rolled oats
olive oil, extra-virgin
fried egg
avocado, sliced
salsa roja (warmed)
pepitas, roasted and salted
feta cheese, crumbled
radish, thinly sliced
jalapeño, thinly sliced
cilantro
salt and pepper to taste

Method
Cook oatmeal according to package instructions. (I use the microwave method – placing 1/2 c. oatmeal, 3/4 c. water and a pinch of salt in a microwave-safe bowl and cook on high for 2 1/2 minutes).
Drizzle oatmeal with a small amount of olive oil. Top with a sunny side up fried egg, avocado, salsa roja. Sprinkle with feta. Garnish with radish, jalapeño, and cilantro. Salt and pepper to taste.
