
Baba Ganoush (Eggplant) Soup
A chilled velouté inspired by the Middle Eastern classic dip Baba Ganoush, this soup blends roasted eggplant with creamy tahini, garlic, and bright notes of fresh lemon.
The smoky depth of the eggplant is balanced by the nuttiness of sesame and a whisper of citrus, resulting in a silk-smooth, refreshing bowl that honors its baba ganoush roots while reimagining them in an elegant, spoonable form. Finished with a drizzle of olive oil, za’atar, and chives – it’s a sophisticated starter ideal for warm-weather dining.
Chilled Baba Ganoush Soup Recipe

- 2 c. chicken (or vegetable) stock at room temperature
- 4 c. Roasted Eggplant Puree
- 1 -2 garlic cloves, minced
- 2 T. lemon juice
- 1/3 c. tahini
- 1/2 t. sea salt
- 1 t. ground cumin
- 1 t. smoked paprika
- 3 T. olive oil
- a few drops of Lazy Kettle Brand All Natural Liquid Smoke
Blend ingredients in a high-power blender such as Vitamix. Refrigerate in the blender container at least two hours, preferably overnight so the flavors meld.
- 1/3 c. plain yogurt
- more chicken stock
When ready to serve, add yogurt and enough chicken stock to get desired consistency. Blend briefly and taste for seasonings.
To Serve
- olive oil
- za’atar
- chives, finely chopped
- edible flowers (optional)
- flatbread
Ladle chilled soup into bowls. Drizzle with olive oil, dust with za’atar, and sprinkle with chives. Serve with warm fluffy flatbread.
