This year, Jimmy Buffett Day is Friday, September 4, 2026, celebrated on the Friday before Labor Day as a time to honor Jimmy’s music, generous spirit, sense of community, and the laid-back island lifestyle he shared with the world.

Jimmy left behind a clear message: “Keep the Party Going.” Today, the Coral Reefer Band continues to play his music and carry on the spirit of the incredible community he created.

And the party really does keep going.

The music still plays. Parrot Heads still gather. Margaritas are still poured. And every year here on Taste With The Eyes, another Jimmy-inspired dish joins the celebration.

It started in September 2023 with a Cheeseburger in Paradise, made in the days following Jimmy’s passing. Since then, the tradition has continued with Jimmy’s Favorite Gumbo, Jimmy’s Jammin’ Jambalaya, Margaritaville Island Rum Cake, and, most recently, Margaritaville Halibut with Artichoke Ragout.

So for Jimmy Buffett Day 2026, I’m bringing them all together — five recipes and tributes celebrating the music, food, stories, and Margaritaville way of life that Jimmy left behind.

I’m also taking a little trip back to Key West in 1991, when my brother and I visited the original Margaritaville Cafe on Duval Street. Along with a photo from that trip, I’m sharing vintage Margaritaville Cafe menus — a fun look back at the early days of Margaritaville.

Jimmy’s Jammin’ Jambalaya

Just a bit spicy, soulful, and adapted straight from the pages of Margaritaville: The Cookbook, this jambalaya is pure celebration in a pot. A Louisiana classic with roots in Spanish paella, French country cooking, and West African one-pot traditions, it’s a true melting pot dish—flavorful and festive.

Packed with shrimp, sausage, chicken and plenty of Creole flair, it’s hearty enough to feed a crowd and lively enough to keep the party going. Put on your favorite Buffett tunes, stir up a batch, and laissez les bons temps rouler…

Margaritaville Island Rum Cake

A tropical dessert with plenty of island spirit. “Nibblin’ on sponge cake, watchin’ the sun bake…”

Warning: This is an Adults-Only Cake. It’s basically a sponge cake infused with rum. Lots of rum.

Margaritaville Halibut with Artichoke Ragout

This time, we’re heading straight to Margaritaville: The Cookbook for Pan-Seared Halibut with Artichoke Ragout, a recipe from JWB Prime Steak and Seafood, the restaurant named for Jimmy himself.

The halibut gets a light coating of breadcrumbs before it’s pan-seared until golden, then served with a savory ragout of artichokes, Kalamata olives, garlic, white wine, butter, lemon, and plenty of fresh parsley.

Jimmy Buffett’s Favorite Gumbo

“Honest to God, when Jimmy comes to my restaurant, he orders gumbo. He loves gumbo. He can get anything else anywhere else. But he can’t get a good gumbo just anywhere,” said his sister, Lucy Buffett.

“My grandmother’s old-fashioned gumbo is a crab and shrimp gumbo with tomatoes and okra—what some people call a summer gumbo,” Lucy Buffett said. “It’s still the one I make most often.”

Jimmy Buffett first arrived in Key West in 1971, and the island soon became home and a defining influence on his music and Margaritaville lifestyle. His song “Cheeseburger in Paradise” followed in 1978, and in the 1980s he turned that island spirit into a real gathering place with the original Margaritaville Cafe, which today remains at 500 Duval Street in the heart of Key West.
