The day gives fans an opportunity to not only toast to our Jimmy and revisit his songs like “Margaritaville” and “Tin Cup Chalice” but also to embrace the carefree, coastal lifestyle he championed.

Florida officially made the last Friday in August “Jimmy Buffett Day” to honor the singer, songwriter, and storyteller who brought the laid-back island lifestyle to life through music, food, and good times.

The resolution from the Florida House of Representatives praises Buffett’s “free-spirited life and significant contributions to national and state culture,” while remembering how he first honed his craft in the bars of Key West. It was there that he built the breezy, tropical rock sound that became a soundtrack for escapism.

Of course, no Jimmy Buffett celebration is complete without food and friends. Last year, I marked the occasion by making his favorite gumbo. This year, we’re diving into Margaritaville The Cookbook for Jimmy’s Jammin’ Jambalaya, a dish that’s as lively and colorful as the music itself. Just like Buffett’s songs, it’s a recipe made for sharing, best enjoyed with a crowd, some laughter, and maybe a margarita or a cup of “good red wine.”

Jimmy’s Jammin’ Jambalaya

Just a bit spicy, soulful, and adapted straight from the pages of Margaritaville The Cookbook, this jambalaya is pure celebration in a pot. A Louisiana classic with roots in Spanish paella, French country cooking, and West African one-pot traditions, it’s a true melting pot dish—flavorful and festive.

Packed with shrimp, sausage, chicken and plenty of Creole flair, it’s hearty enough to feed a crowd and lively enough to keep the party going. Put on your favorite Buffett tunes, stir up a batch, and laissez les bons temps rouler…

Opus One

Fill It Up With Good Red Wine

Pairing Opus One with jambalaya is a playful, indulgent experiment—definitely fun, though far from classic. Inspired by Jimmy’s song “Tin Cup Chalice,” one of our favorites, the idea brings a touch of whimsy to the table.

The wine’s structured tannins, dark fruit, and oak depth are a world apart from the smoky, spicy, and rustic flavors of traditional jambalaya. Yet, when the dish is adjusted toward a meat-forward, mildly spiced version with rich sausage and chicken, the wine’s intensity can find a kind of harmony with the dish’s savory depth. It’s a pairing that surprises the palate: the jambalaya’s smoky layers soften the wine’s tannins, while the wine’s luxurious fruit and complexity elevate the dish in a way that’s unexpected and memorable.

This recipe is similar to the one I posted last month. For Jimmy Buffett Day, I shared my version of his sister Lucy Buffett’s Summer Seafood Gumbo. Here, the gumbo is finished with smoky, creole-spiced Andouille Pork Sausage instead of crab, and more shrimp stock for soupier style.

“Gumbo Soup” is a term sometimes used to describe a thinner version of gumbo. It has the same ingredients and flavors as traditional gumbo but with a more broth-like consistency, closer to a soup than a stew. Both ways are excellent, just a little different.

The Florida House of Representatives created an official day to honor the icon earlier this year, passing legislation to declare August 30th as “Jimmy Buffett Day.”

The resolution seeks to celebrate the life and music of Jimmy Buffett, whose “free-spirited life and significant contributions to national and state culture are commended and celebrated.”

“Jimmy Buffett honed his art as a singer-songwriter in the bars of Key West,” the resolution states. “And the laid-back island lifestyle of the Florida Keys was the foundation on which he built his signature tropical rock sound.”

“Honest to God, when Jimmy comes to my restaurant, he orders gumbo. He loves gumbo. He can get anything else anywhere else. But he can’t get a good gumbo just anywhere,” said his sister, Lucy Buffett.

My grandmother’s old-fashioned gumbo is a crab and shrimp gumbo with tomatoes and okra—what some people call a summer gumbo,” Lucy Buffett said. “It’s still the one I make most often.”

Little did we know on December 14, 2023 at the Dolby Live theater at Park MGM in Las Vegas, that we were witnessing the final show of his lifetime.

Our beloved country music icon, unapologetic patriot and huge supporter of our troops, kind-hearted philanthropist, and authentic troubadour Toby Keith, passed away less than two months later.

Here I honor his memory with a recipe and stories about his favorite sandwich.

It was a special moment when Toby played his last big hit “Don’t Let the Old Man In.”

In 2017, during Clint Eastwood’s golf tournament in California, he shared with Toby Keith that he was about to leave for a three-month shoot for “The Mule.”

Toby, impressed by Eastwood’s ability to handle such a busy schedule at an older age, asked, “How do you do it, man?” Eastwood replied, “I just don’t let the old man in.” This sparked Toby’s creative process and inspired him to write the song.

Toby then followed that song with a tribute to his late friend, Jimmy Buffett with “Changes in Latitudes, Changes in Attitudes.”

Toby Keith's Favorite Fried Bologna Sandwich

I Love This Bar & Grill opened at Harrah’s Las Vegas in 2005. It had a long run but never reopened again after closing due to the pandemic in 2020.

In this video, the singer tells the story of the executive chef at Caesars Entertainment, Inc. (Harrah’s parent company) who was thoroughly displeased upon discovering a fried bologna sandwich featured on the new restaurant’s menu.

Despite the chef’s initial decision to remove it, Toby stood firm on keeping it. Eventually, the chef acknowledged that the sandwich was responsible for the restaurant’s remarkable success, boasting an opening volume three times greater than their other establishments.

I also read that Toby had a horse named Fried Bologna. I hope that’s true. 🐎
