When Gymkhana—one of London’s most celebrated Indian restaurants—opened its first Las Vegas location, it quickly became one of the city’s most anticipated dining destinations. While a reservation is certainly on my list, I was equally excited to discover that several of the restaurant’s signature simmer sauces are available to order online.

For this dinner party, I built the menu around three of those sauces: Green Tikka, Butter Masala, and Goan Coconut Curry. Each one delivers the depth and complexity of Gymkhana’s distinctive flavors, making it easy to create an elegant Indian-inspired meal at home while adding a few personal touches.

The silky Butter Masala was a natural pairing for buttery Chilean sea bass, finished with a swirl of warm cream, fresh cilantro, and sliced jalapeño. Sweet prawns nestled into the fragrant Goan Coconut Curry, then were garnished with chile oil, cilantro, and edible flowers for a vibrant presentation. Roasted corn, coated in the herbaceous Green Tikka marinade, added smoky flavor and bright color to the plate.

To complete the meal, saffron basmati rice was finished with toasted cashews, jewel-like pomegranate arils, fresh mint, and cilantro. Curry-pickled red onions added a tangy counterpoint that balanced the richness of the curries, while warm naan and a cool garlic yogurt chutney tied everything together.

The result was an elegant dinner inspired by one of London’s iconic Indian restaurants, yet relaxed enough to enjoy at home with friends. Three exceptional sauces provided the foundation, while high-quality seafood, summer corn, plenty fresh herbs, and thoughtful garnishes made the evening uniquely my own.

This vibrant bowl pairs succulent duck legs with a silky butter masala sauce, served over fluffy white rice and finished with lively garnishes. Jewel-like pomegranate arils add sweet-tart brightness, cashews contribute satisfying nutty crunch, and fresh cilantro brings a final lift of herbal freshness. The colors alone make the dish striking on the plate, while the flavors come together in a harmonious balance of savory, tangy, creamy, and crisp.

The beauty of this recipe is how quickly it comes together. The duck legs—found in the refrigerated section at Costco—are fully cooked using the sous vide method. Vacuum-sealed and cooked to a precise time and temperature, they simply need to be reheated before serving, making them perfect for an easy but impressive meal.

Gymkhana—the celebrated Indian restaurant from London—recently opened a location in Las Vegas and has begun selling their premium sauces in the United States. They are even offering one of their jaunty serving dishes from Burleigh Pottery as well. Naturally, I couldn’t resist.

Back in January I shared my Butter Masala Chicken Bowl with Green Herb Chutney and Yogurt using Gymkhana’s superb Butter Masala Mild Simmer Sauce. Then in February I posted Char Siu Duck Legs over Braised Cabbage after discovering those convenient sous vide duck legs at Costco. This new recipe combines those two ideas: the richly spiced butter masala sauce paired with succulent duck legs and steamed white rice.

The result is both comforting and elegant. The warm spices and gentle creaminess of the sauce complement the natural depth of the duck, while the rice provides a soft, neutral base. Imagine tender grilled chicken thighs, in an authentic butter masala sauce, topped with a bright, herbaceous cilantro-mint chutney and a drizzle of yogurt—served with a scoop of fragrant jasmine rice—every bite smoky, tangy, and layered with flavor.

Chicken thighs are cooked on the grill for a smoky char, chopped, then finished in butter, and simmered in the warm, aromatic masala sauce.

The green chutney spooned on top adds a fresh, herbaceous lift, with a kick from chili and ginger and a subtle richness from roasted peanuts. The lightly thinned yogurt brings cooling creaminess, balancing the spice and tying the flavors together.

This colorful Indian-inspired dish combines fire-kissed, juicy chicken in a spiced butter masala sauce with the zesty, vibrant chutney and silky yogurt, creating a harmonious medley of flavors and textures that’s both comforting and exhilarating.
