We recently had an extraordinary dinner at their newly opened location in the Red Rock Casino…at what is widely agreed to be the best Thai restaurant in Las Vegas, Lotus of Siam.

Since 1999, Chef Saipin Chutima and her family have owned and operated this world-renowned restaurant. Chef Saipin’s cooking revolves around the Northern Thai recipes passed down from generations of her family. She received the coveted James Beard award for Southwest Region Chef in 2011.

Lotus of Siam’s 3rd location at Red Rock Casino Resort opened in November 2022, with Saipin’s daughter, Penny, at the helm. The design of the restaurant is casual yet breathtaking, and everything one would expect from a new Red Rock concept. Eater Vegas chose their Chiang Mai-inspired style as the Best Design of the Year.

The elevated food is obviously not your local hole-in-the-wall Thai menu (although there is nothing wrong with that!).  And the award-winning wine list and service are impeccable. We enjoyed a bottle of the lovely HeavenSake with our meal.

We shared several dishes – all excellent – some highlights included Chilean Sea Bass with Sweet & Sour Sauce, Penny’s Ceviche, Garlic Prawns, and of course the Crispy Duck Panang.

By the way, their base sauce recipes are a secret. Only three people know the recipes according to Chef Saipin in the Las Vegas Review-Journal. Craving the exotic flavors of Lotus’s stellar dish, I set out to create my own version of Crispy Duck Panang.

I have been a supporter of the James Beard Fellows Program which assists in the training and professional development for talented emerging chefs.

Each Fellow has a ten-week residency at the James Beard House in New York City where they receive hard skills training along with the opportunity to develop a meal kit that is available across the country.

This month, Philly native Chef Tonii Hicks developed a delicious-sounding menu of Sweet Potato Croquettes with Green Curry Sauce, Blackened Cod with Lima Bean Risotto, and Apple Butter Sticky Buns.

The meal kit can be ordered here now through September 13, 2022. The monthly Beard Box meal kit for two is shipped overnight. This month’s box will arrive on September 28, 2022. The portions are generous, and it is a delight to experience the emerging chefs’ creativity while supporting the James Beard Foundation.

Unfortunately, due to timing, I won’t be able to purchase the Beard Box this month. But that Blackened Cod with Lima Bean Risotto sounded just too awesome. So… I had to try my version of it right away with my Rockfish on hand. And it was fabulous. It was a harmony of beautiful colors, various textures, bold bright flavors. Thank you and brava, Chef Tonii! I am sure your Beard Box will be a huge success!

Virtual Cooking Class with Chef Paul Kahan

Sitka Salmon Shares, an Alaskan direct-to-consumer seafood company, paired with Chef Paul Kahan, the two-time James Beard Award winner behind popular Chicagoland restaurants avec, The Publican, and Big Star for a Virtual Cooking Class featuring their wild Alaska sockeye salmon.

Guests received a meal kit for two shipped to their door plus a code to cook virtually alongside Paul, and Culinary Director Perry Hendrix. The cost was $149 plus shipping. There was a generous amount of product in the shipment, enough to feed four, making this a delightful gourmet experience a very reasonable cost per person. And it was especially neat to spend time with one of Chicago’s great gregarious chefs in his own kitchen.

In May of 2021, they launched the Beard House Fellows program, which re-envisions the potential of the historic space into a hub of training and professional development for talented emerging chefs.

Each Fellow has a one-month residence at the Beard House where they receive hard skills training along with the opportunity to develop a meal kit that is available across the country.
