Global Shrimp: Haricots Verts, Chickpeas, Feta with a Korean Marinade

The classic Greek pairing of shrimp and feta, along with French haricots verts, Indian chickpeas, and a Korean soju & soy marinade result in a side dish most likely to attract attention. This global amalgamation of ingredients is finished with a sprinkling of toasted sesame seeds and gochugaru, a Korean red chile powder that is barely spicy, and somewhat sweet and smoky. Served at room temperature – it’s a fusion dish that would make a terrific addition to any buffet, BBQ, or picnic.

Global Shrimp: Haricots Verts, Chickpeas, Feta with a Korean Marinade

Haricots Verts with Korean Marinade

Haricots Verts:

  • 12 oz. french green beans
  • 1 1/2 T. leek, finely sliced
  • 2 t. garlic, minced
  • 2 T. soy sauce
  • 1 T. olive oil
  • 1 T. sesame oil
  • 2 T. soju
  • sea salt and fresh ground pepper

Place haricots verts on a sheet of aluminum foil. Top with leek and garlic. Sprinkle soy sauce, oils, and soju over the beans. Season to taste with sea salt and pepper.

Fold the foil to make a tight package and place on a baking sheet. Cook in a 400° oven for about 10 minutes or until the beans are tender.

Place haricots verts along with the marinade in a large bowl and let come to room temperature.

  • 15 oz. can chickpeas, rinsed and drained
  • 1 lb. jumbo shrimp, cooked, at room temperature

Add chickpeas and shrimp to the haricots verts and toss gently to coat with the marinade.

Place shrimp mixture on a serving platter. Garnish with crumbled feta, gochugaru, and toasted sesame seeds.

  1. Looking beautifully appetizing as usual, I would be very happy to have this as a main dish rather than a side. Have never thought of cooking green beans ‘en papillote’ – have some at home: shall try tomorrow 🙂 ! There is ‘fusion’ and ‘fusion’ – this one obviously works!!
