Caraway Horseradish Sauce
Got left over corned beef? Try corned beef & cabbage tacos. Yep, nestled within charred corn tortillas are cubes of tangy salty spiced leftover corned beef topped with seasoned green cabbage, a creamy caraway horseradish sauce and pickled carrots. These vivacious tacos are filled with an adaptation of the ingredients found in that classic St. Patrick’s Day recipe. Except potatoes. But if you are missing the potatoes, I have a recipe for that too (see below).
Corned Beef and Cabbage Tacos Recipe
Carrots Escabeche (Spicy Pickled Carrots)
- prepared carrots and jalapeños en escabeche
- celery rib, thinly sliced
- white onion, thinly sliced
Remove carrots and jalapeños from pickling liquid, then cut carrots into small cubes. Toss diced carrot and jalapeño with celery and onion. Reserve celery leaves for garnish.
Caraway Horseradish Sauce
- 1/2 t. caraway seeds, toasted
- 1 1/2 oz. mayonnaise
- 1 1/2 oz yogurt
- 1/2 t. prepared horseradish, or to taste
- salt to taste
Combine ingredients in a small mixing bowl. Add a bit of water to thin, if necessary. Set aside to let flavors meld.
Seasoned Green Cabbage
- green cabbage, shredded
- lime juice
- olive oil
- salt and pepper
Place cabbage in a medium bowl. Season with a squeeze of fresh lime juice and a splash of olive oil, salt and pepper. Toss to coat.
Charred Corn Tortillas with Wholegrain Mustard
Cook corn tortillas over an open flame, turning several times with tongs to heat through and get a nice char in spots. Swipe wholegrain mustard over half of the tortilla.
Corned Beef and Cabbage Tacos
- cooked corned beef, diced or shredded – warmed
- charred corn tortillas
- seasoned green cabbage
- caraway horseradish sauce
- carrots escabeche
Place corned beef in warm tortillas swiped with mustard. Top with cabbage, caraway horseradish sauce, and carrots escabeche. Celery leaves make a pretty pale-green garnish. Pair with a pint of stout.
