Caviar Hot Dog

A caviar hot dog blends street food with luxury. The smoky meat and briny caviar balance each other, while textures—the snap of the dog, the pop of roe, and the toasty buttery bun—add contrast and complexity. Crème fraîche and dill bring creamy, tangy, slightly grassy notes.

Visually, it’s bold and striking: the deep black pearls of caviar glisten against the warm, golden tones of a toasted bun. But the real appeal is the juxtaposition—everyday food made extravagant. It’s playful, a little absurd, and surprisingly good.

Method

Prepare dill crème fraîche by combining crème fraîche with finely chopped fresh dill, a pinch of salt, and a small splash of cold water to get a flowing consistency as opposed to a thick dollop.

Cook hot dogs under the broiler until hot all the way through. Turning once or twice.

Meanwhile slice the buns down the middle if they aren’t already split, keeping the hinge intact if possible. Heat a non-stick or cast-iron skillet over medium heat and add about 1 to 2 tablespoons of unsalted butter. Once the butter has melted and is gently bubbling, place the buns cut-side down into the skillet and press lightly so they make good contact with the pan. Let them toast for 1 to 2 minutes, or until the insides are golden brown—brioche browns quickly due to its slight sweetness, so keep an eye on it.

Remove onion from pickling liquid and blot dry on paper towels.

Let the hot dogs cool slightly before composing the plate. Plate the bun, place a hot dog in the center. Arrange fresh cucumber half-moons and pickled onion along one side.

Spoon dill crème fraîche onto the hot dog in three vertical lines. Then generously spoon caviar in between. Garnish with fresh dill sprigs.
