A fantastic seasonal Strawberry Watermelon Salad paired so well with our Memorial Day BBQ of grilled Tri-Tip au Jus and Corn on the Cob, it would be excellent on Flag Day or the 4th of July or really any day for a cookout this summer! ☀️

This salad was inspired by one of the dishes we enjoyed last month at Primal Steakhouse Las Vegas. It was quite a celebration at Primal where they set things on fire and employ lots of smoke in their cocktails and dishes. 🔥

Their Watermelon Salad was surpringly fresh and delightful, a perfect counterbalance to all the rich smoky foods including bone marrow shanks, bacony seared scallops, four cheese lobster mac, smoked NY steak, and more.

The service was super-fun and super-friendly. The themed atmosphere was charmingly mysterious and medieval. Guests are fully encouraged to unsheathe and pose with the assorment of swords from a coat of arms hanging on the wall, as well as take pics wearing helmets fashioned from the middle ages!

Themed restaurants unfortunately can vary widely in the quality of their food. This one impressed us by offering delicious upscale food and entertaining service, as well as a unique and memorable dining experience.

And while our dessert crème brûlée was set ablaze, the server handed me a heavy 4-foot-sword to heave into the air while all the folks in the dining room sang “happy birthday” and finished with “off with his head!”

Asparagus Cream Sauce, Balsamic Reduction

This lovely fish and asparagus dish was inspired by one of several fabulous courses we enjoyed at Picasso Restaurant by Chef Julian Serrano in Las Vegas.

The Chef’s menu is drawn from his own background in the regional cuisines of Spain and France, and in honor of Pablo Picasso’s Spanish heritage and years the master artist spent living in France.

The fish course was particularly memorable for its simplicity, harmony, and quality. A beautiful fillet of seared Chilean Sea Bass sat on a raft of perfectly cooked asparagus spears, covered with a light blanket of sauce hollandaise. The brilliant element of the dish was the Chef’s addition of a balsamic reduction, which juxtaposed intense sweet and tangy notes with the rich fish and buttery sauce.

For my version, I serve a pan-seared Wild Alaska Pacific Cod with its pleasant, slightly sweet, mild clean taste and lean flaky texture. And here, hollandaise is replaced by an Asparagus Cream Sauce made from the surplus of my Asparagus Soup for a delightful springtime dish.

Roasted Brussels Sprouts, Italian Sausage, Balsamic Syrup

Last Thanksgiving’s Brussels Sprouts with Bacon Shards was such a hit, I’m going to add meat to the veggie dish again this year. Bacon and Brussels sprouts are a classic pairing, but for an unexpected twist, I’ll be serving the little brassicas with Italian sausage seasoned with fennel. Fennel seeds add interesting anise notes that complement and add complexity to the roasted sprouts.

A balsamic vinegar reduction will add sweet notes and enough acid to balance the rich sausage. A sprinkling of parsley will bring bright, fresh qualities. I’m confident that this side dish will be equally, if not more popular, than the bacon version. As a bonus, ease of preparation and a short ingredient list make this one a winner for the busy holiday cook (me).

Grilled Peaches, Blueberries, Balsamic Molasses Syrup, Black Pepper

Luscious peaches, smoky and warm, right off the grill are paired with plump Oregon blueberries and a small scoop of premium vanilla ice cream. The sweet and tangy balsamic molasses syrup together with the unexpected black pepper spice results in captivating summertime dessert.
