On the first night of Hanukkah, Nashville Hot Latkes made their debut. By the last night, they were so popular they had to make a comeback.

Nashville hot chicken has its roots in African American kitchens in Tennessee, where fried chicken is famously finished with a fiery paste of cayenne, spices, and hot oil, then served atop white bread with pickles to temper the heat.

What began as a local specialty grew into a national obsession because of that unmistakable contrast: crackling crispness, deep savory flavor, and heat that builds and lingers. The final brush of spiced oil isn’t just a garnish—it’s the defining moment, delivering the intensity that makes Nashville hot chicken so addictive.

The story goes that Thornton Prince III, a Nashville resident, had a reputation for being a womanizer. One day, after a late night out, he came home to his girlfriend who wanted to teach him a lesson. In an attempt to make his breakfast unappetizing, she heavily seasoned the chicken with cayenne pepper. However, instead of being put off by the spice, Prince enjoyed the fiery flavor and decided to share it with his friends.

In the late 1930s, Prince’s Hot Chicken Shack was officially established, and the popularity of Nashville hot chicken began to grow. Over the years, the dish became a local favorite and gained recognition way beyond Nashville.

We are huge fans of the city of Nashville, and Nashville Hot Chicken. A little while back we did a tasting of Nashville Hot Chicken in Vegas.

The chicken is often served on a piece of white bread or in between a bun. Here, I take the hot chicken concept and serve it in charred flour tortillas. By all accounts, it’s just another way to enjoy fabulous Nashville hot chicken.

Last weekend my brother Don and nephew Stone came to town to watch the Chicago Bears play the Las Vegas Raiders at Allegiant Stadium. With the super popularity of Nashville Hot Chicken in Vegas, we thought it would be fun to do a “hot chicken tasting” the day before the game.

We chose 5 popular restaurants off The Strip that serve Nashville Hot Chicken, all on the south end of Las Vegas. We ordered one sandwich, with a side, to split between the three of us. If there was a choice of degree of spiciness, we chose the medium spice to be consistent.

The sandwich was rated on a scale of 1 to 10 in five different categories: chicken, spices, bun, presentation, and toppings. At the end, we reviewed our ratings and we each gave the sandwiches an overall ranking.

To put it in polite terms, Thornton was…active…on the dating scene — so active in fact that one of his girlfriends decided to seek revenge on his two-timing ways by cooking him some fried chicken with a little too much of a kick to it.
