Of his savory baked vegetable terrine, the Chef says,”It’s impressive and somewhat different.” With broad flavor appeal and a jaunty presentation, this Carrot and Broccoli Rabe Terrine is perfect for entertaining. And Wolfgang Puck sure knows a thing or two about entertaining. This year his catering company hosted Hollywood’s biggest after-party, the Academy Awards Governors Ball for the 30th year!

“To me, spending time in the kitchen should be effortless. It shouldn’t be complicated. It should be fun!” says Wolfgang on Facebook.

While the preparation of this terrine isn’t exactly effortless, it isn’t complicated, and the result is quite fun… Carrots, broccoli rabe, and cheddar are the primary flavors in this delightful layered loaf. Here, I add my umami-rich and creamy Savory Herb Sauce to complement the vegetables, adding another layer of flavors, texture, and herbaceousness.

Porchetta Roast and Sandwich

Exactly fourteen years ago, I hosted a Porchetta Party at my home where we crafted a lovely porchetta roast and other porchetta dishes entirely from scratch. However, this time around, things are a bit different. I’m opting for convenience by cooking a pre-made roast from Costco. While it’s a simpler approach, the results are still delicious.

Porchetta stands as an Italian culinary masterpiece. It involves a dexterous process of hand-rolling and tying a free-range heritage pork loin and belly. This delectable creation is stuffed with a blend of spices, garlic, and lemon zest. Seasoned with a mix of salt, lemon juice, and white wine, the porchetta is then roasted to perfection.

With its succulent savory interior and crave-worthy crackly skin exterior, Porchetta Roast makes an impressive and photogenic centerpiece. Leftover roast can be transformed into equally spectacular Sandwiches.

La Cucina Calabrese – A Rustic Southern Italian Dinner Party

Discovering Calabria – A Rustic Southern Italian Dinner Party

Inspired this past weekend, by the recent gift of a new Calabrese cookbook, my friends and I prepared an authentic Southern Italian feast. The setting was beautifully simple, complete with herbs, flowers and citrus fruits from our gardens. For the menu, we adapted seven recipes from My Calabria by Rosetta Costantino with Janet Fletcher, with outstanding results.

We enjoyed exploring this lesser known regional cuisine, learning about the remote and somewhat mysterious Calabria as we constructed our menu. Dusty and hot mountainous regions, steep slopes, and narrow coastlines all contribute to the uniqueness that is La Cucina Calabrese.

We served esoteric Italian wines with the meal, wines that paired well with the simple yet robust Calabrese cuisine. Unfortunately we had difficulty locating wine specifically from Calabria, but we certainly were not disappointed with the fabulous bottles that graced our table. And we enjoyed Gino’s locally famous homemade limoncello to cap off the affair.

Unlike most of our dinner parties, the dishes were served family style. There was plenty of conviviality and great food & drink, as we experienced Southern Italy via Southern California.
