Dubliner is a robust aged cow’s milk cheese from West Cork, Ireland with a texture similar to a cheddar. It has nutty, sharp, sweet flavors that come from the milk of Irish grass-fed cows.

Cauliflower and Aged Gouda Soufflé
These delightful soufflés are perfect for a springtime luncheon! 36 month-aged Gouda from the Netherlands adds nutty, butterscotch flavors and an interesting salt crystal crunchy texture. This flavorful cheese pairs well with a full-bodied complex Alsatian Pinot Gris.
The soufflés are super easy to prepare, and bake up to a puffed golden brown in 35 minutes. Served with a pretty side salad, they make a lovely light lunch…or easily double the recipe and serve them on a platter as part of a buffet because, as a bonus, the soufflés hardly deflate so they are excellent for entertaining.

Red Lentil Spaghetti with Cauliflower Rosa Sauce

This is THE pasta dish for everyone. Not only is it wholesome and delicious – it is gluten-free, vegan, high protein, high fiber, lower carb, clean, fresh and fabulous. My friends at Explore Cuisine are introducing a spaghetti made of red lentils. This spaghetti has a texture similar to traditional spaghetti. And it pairs wonderfully with my vegan Cauliflower Rosa sauce. Parma Rosa is a pasta sauce typically made with tomatoes, cream, and Parmesan. Here, I substitute cauliflower and olive oil for the cream and cheese, and roast the tomatoes in the oven with garlic for a deeper flavor. The result is a lower-cholesterol sauce that is full of vegetable nutrition and is super-satisfying. For everyone.

OK Low-Carb, Gluten-Free, Grain-Free, Vegetarian friends – this pizza is for you! Smoky grilled eggplant tops a pizza crust made of cauliflower. Grape tomatoes, kalamata olives, garlic, basil, and mint are tossed with a bit of olive oil, salt and red chile flakes then loaded on top of the eggplant. Sprinkled with shredded mozzarella then popped in the oven until everything is nice and hot – this pizza will delight everyone, but especially those who want to replace the dough. Cauliflower naturally has lower carbohydrates, higher fiber, and more nutrients than traditional flour-based pizza dough. This is a true veggie pizza.
