Recently I was inspired by a serving platter. A gorgeous sculpted platter, a birthday gift from my brother and sister-in-law. I had been displaying it as a centerpiece, but had not actually used it to serve any food. It is too special, and fragile. Several of the small cups are attached to the platter, in various sizes and angles. They reminded me of banchan plates, used to serve a variety of Korean side dishes. Whatever I was going to serve on this platter had to be worthy of its simplicity, uniqueness, and beauty…

Risotto: Carrot, Cumin, Vodka, Creme Fraiche

I just happened to be thinking about making risotto while reading the Proud Italian Cook’s fabulous new ebook, Italian Sauces My Way (highly recommended and available here). In her book, my friend Marie has a recipe for Vodka Cream Sauce which she recommends spooned over steamed mussels, ravioli, gnocchi, or the classic penne pasta. It’s not a complicated sauce but the vodka makes it fancy, taking her delicious basic marinara to another level. Anyway, her wonderful sauce got me thinking about pairing vodka and risotto.

Other than tomato, what vegetable would pair well with vodka? Beet, celery, and carrot all sounded right. I decided to make the first trial with carrot. I added a kiss of cumin and a some creme fraiche for the creamy element. The color was so incredibly lovely, I didn’t want to detract from it. So the dish was finished with a nasturtium flower from the garden, keeping that monochromatic look.

Kick Off Summer: Zucchini Quinoa Burgers

Memorial Day weekend officially kicks off the summer grilling season. It’s also the time to honor our Fallen while we celebrate our Freedom. It’s a day to balance solemnity with revelry.

In addition to serving great food and drink at our picnic, we hang the U.S. flag, create a patriotic flower bouquet, and observe a minute of silence at 3:00 PM to honor and remember those who have died in service to our nation. Before lighting up the grill, we turn on the television to watch the President lay a wreath at the Tomb of the Unknowns, we listen as a lone bugler plays Taps.

With summer on our minds and thinking about balance ~ I thought I would lighten up the burgers with the addition of vegetables, grains, and sprouts. The result was a ground beef burger mixed with loads of shredded zucchini and cooked quinoa, topped with sauteed zucchini medallions and sprouts, plus a flavorful feta aioli. It was surprisingly good and immensely satisfying.
